My day job managed to scupper that quite successfully. I guess you can&#8217;t win them all and at some point I have to earn the pennies!<\/p>\n<p>What I have managed to do though &#8211; mainly because if I had put it off too much longer it would have been too late &#8211; is make a nice supply of elderflower syrup (known here as Holundersirop).<\/p>\n<p>As you can see above, my elderflowers are in full bloom. Look at the colour of the sky &#8211; heavenly isn&#8217;t it? We sure as heck haven&#8217;t seen too many skies like that around here recently!<\/p>\n<p>My children love elderflower Syrup. I wouldn&#8217;t exactly call it healthy &#8211; it&#8217;s basically sugar water with a bit of an elderflower aroma &#8211; but at least it isn&#8217;t full of all the other horrible additives in children&#8217;s drinks!<\/p>\n<p><span style=\"text-decoration: underline;\">Elderflower syrup<\/span><\/p>\n<p>6 &#8211; 8 elderflowers<\/p>\n<p>1 litre water<\/p>\n<p>1 kilo sugar<\/p>\n<p>20g Citric acid crystals<\/p>\n<p>The elderflowers should be rinsed and then left to soak in the water for a couple of days &#8211; if possible in sunshine.<\/p>\n<p>Sieve the mixture to remove the flowers and boil the flavoured water with the sugar, stirring continually.<\/p>\n<p>Add the citric acid and stir.<\/p>\n<p>Pour into clean bottles and seal. Once a bottle is reopened it should be stored in the fridge.<\/p>\n<p>Serve diluted with still or fizzy water and some ice.
