Elderflower syrup ….the taste of early summer
I haven’t managed to get an awful lot creative done over the last two days. My day job managed to scupper that quite successfully. I guess you can’t win them all and at some point I have to earn the pennies!
What I have managed to do though – mainly because if I had put it off too much longer it would have been too late – is make a nice supply of elderflower syrup (known here as Holundersirop).
As you can see above, my elderflowers are in full bloom. Look at the colour of the sky – heavenly isn’t it? We sure as heck haven’t seen too many skies like that around here recently!
My children love elderflower Syrup. I wouldn’t exactly call it healthy – it’s basically sugar water with a bit of an elderflower aroma – but at least it isn’t full of all the other horrible additives in children’s drinks!
Elderflower syrup
6 – 8 elderflowers
1 litre water
1 kilo sugar
20g Citric acid crystals
The elderflowers should be rinsed and then left to soak in the water for a couple of days – if possible in sunshine.
Sieve the mixture to remove the flowers and boil the flavoured water with the sugar, stirring continually.
Add the citric acid and stir.
Pour into clean bottles and seal. Once a bottle is reopened it should be stored in the fridge.
Serve diluted with still or fizzy water and some ice. Delicious!!
And here it all is – I made a quadruple batch and have even more in the fridge as I ran out of bottles!

Oh my goodness – I think I can actually smell it. I think I would like something like that. Is it good with seltzer and vodka? lol

I have never heard of elderflower syrup. Pretty tree! This is my first visit to your blog and I enjoyed reading your posts. Thanks for sharing!
